Specialty Honeys
A few years ago we started blending some honey with different things. I bucked the idea for some time because "why would I want to mess with what only the bees can do". It has become a large part of our sales over the years. We source our additives from a half dozen suppliers and spend much time making sure we maintain a high standard. The bees hold one, why shouldn't we? We primarily use freeze-dried fruit. Our Hazelnut Honey contains organic dried roasted hazelnuts. Others contain dehydrated ground fruit, high quality spices, and/ or small amounts of juice for flavour and colour. These will get your mouth watering. After this you must check out our Recipes page!

The biggest advantage of using freeze-dried fruit is that it is simply powdered fruit, and that is all. I am sure that you have heard that honey doesn't go bad. There are things that can happen to honey, but for all intents and purposes, yes properly cured honey from the beehive extracted and stored properly will never go bad. Honey is able to accomplish this simply by lowering the moisture content. There is a bit more involved, but I trying to keep it simple! By using freeze-dried powdered fruit as the main additive we actually lower the moisture content of our honey even more than the bees. Therefore our honeys could outlast all of the readers of this webpage! The reason I mention this is because I have seen people mixing juices and syrups with honey to flavour it. Often one has little control and or knowledge regarding the production of additives, so we are cautious and want to make sure we provide the best. Also the freeze-drying process retains more nutritive values in the fruit than any other process. So? Well, to get better fruit quality, you'd have to pick it and add it fresh.
